Health is stored as a 4 byte and can be searched. I am more familiar with cheat engine, but I believe that cosmos has similar capabilities. That said, when I need unlimited health and the cheat happens option isn't working, I'll use cheat engine. I don't have a great need for it as I'm farming idols at the moment and often reset well before hitting a ceiling.
Freezing health is one of the cheat options but is also the quickest to break with the constant game updates.
